Dextrin is a partially hydrolyzed starch derived by heating or roasting starch in the presence of an acid. This reaction is catalyzed by the acid. The material has been called "white dextrin." One of the key properties of this ingredient is that it dissolves well in cold water. Some formulations need cold water to be used in mixing ingredients, so using Dextrin helps for this reason.
