Anhydrous lactose is a naturally occurring simple carbohydrate found exclusively in mammalian milk, commonly known as "milk sugar." It is derived as a by-product of the dairy industry, primarily sourced from cow's milk. Chemically, lactose consists of two simple sugar molecules: D-galactose and D-glucose, linked together in a disaccharide structure. Lactose occurs in two isomeric forms, referred to as alpha (α-lactose) and beta (β-lactose).
